    Gingered Golden Pilaf


( uses Golden Harvest Pasta Grain Blend )

  • 1 teaspoon toasted sesame oil
  • 3 scallions, thinly sliced
  • 1 tablespoon peeled and minced fresh ginger
  • 2 medium carrots, peeled and cut into small dice
  • 1 cup Golden Harvest Pasta Grain Blend
  • 1 3/4 cups water or chicken broth
  • 1/2 teaspoon kosher salt, if cooking with water
  • Heat the sesame oil in a small saucepan set over medium-high heat. Add the scallions and ginger and stir for a minute. Add the carrot and stir to coat the carrot with the oil. Add the Golden Harvest Pasta Grain Blend and mix well. Pour in the water and salt or broth. Bring to a boil, then cover, lower to a simmer and cook for 18 minutes. Remove from heat and let sit for 3 minutes before fluffing pilaf with a fork. Serve immediately. Makes about 3 cups.
