1 Cup uncooked Farro
1 Large Yellow Onion - Diced
1 Tbsp Garlic - Chopped
2 Medium Yukon Gold Potatoes - 1/2" Dice
2 Sweet Italian Sausages - cooked & diced 1/3"
1 Cup Chopped hazelnuts
2/3 Cup Olive Oil
1 1/2 Cup Chopped Parsley - Packed
3 Tbsp chopped fresh Rosemary
1/3 Cup Fresh Squeezed Lemon Juice
Salt and Pepper to taste
Cook Farro using package instructions. Cool. Saute diced onion and garlic in oil over medium heat until lightly caramelized . stirring frequently. Cool. Saute diced potato in oil until browned and
cooked through. Blend all ingredients, and season to taste with salt and pepper. This dish can be made a few days in advance if needed. You may need to add more oil before serving and wait to add
hazelnuts until just before serving.
