    Farro Rustica Salad


( uses Farro )

  • 1 Cup uncooked Farro
  • 1 Large Yellow Onion - Diced
  • 1 Tbsp Garlic - Chopped
  • 2 Medium Yukon Gold Potatoes - 1/2" Dice
  • 2 Sweet Italian Sausages - cooked & diced 1/3"
  • 1 Cup Chopped hazelnuts
  • 2/3 Cup Olive Oil
  • 1 1/2 Cup Chopped Parsley - Packed
  • 3 Tbsp chopped fresh Rosemary
  • 1/3 Cup Fresh Squeezed Lemon Juice
  • Salt and Pepper to taste
  • Cook Farro using package instructions. Cool. Saute diced onion and garlic in oil over medium heat until lightly caramelized . stirring frequently. Cool. Saute diced potato in oil until browned and cooked through. Blend all ingredients, and season to taste with salt and pepper. This dish can be made a few days in advance if needed. You may need to add more oil before serving and wait to add hazelnuts until just before serving.
