    Anaheim Chile And Mango Chicken Salad


( uses Tri Colored Orzo )

  • 1 Cup uncooked Tri Colored Orzo - Cooked per package instructions and cooled
  • 2 Medium Chicken breasts, pounded to 1/2" Thickness
  • 4 Tbsp Chipotle BBQ Seasoning Divided
  • 1 Cup non-sulfited Diced Mango - rehydrated
  • 1 1/2 Cup Jicama Diced
  • 1/2 Cup Diced Green Anaheim Chili - Rehydrated
  • 4 Scallion Chopped
  • 1/2 Cup Chopped Cilantro
  • 5 Tbsp Safflower Oil
  • 4 Tbsp Fresh Lime Juice
  • 2 Tsp Agave Nectar
  • Salt and Pepper to taste
  • Dredge Chicken in 3 1/2 Tbsp Chip BBQ Seasoning. Sear and cool. Blend all ingredients, including remaining 1/2 Tbsp Chip BBQ and season to taste with salt and pepper.
