Giant white corn is perfect for posole (a thick Mexican stew, often flavored with pork.) This corn can baked, broiled, fried, used in soups, and it is wonderful tossed with rice and spices. A truly versatile grain! Soak overnight in water. Rinse grains, place in pan and cover with water. Simmer 2-3 hours until corn 'bursts' open. Add salt during the last 15 minutes of cooking time. One cup dry yields 2-3/4 cups cooked.
